QUAKER BONNET was founded by Harold Hayes in the early 1930's.
The quaint little shop of Elmwood Avenue carried some of the city's finest Confections. Hayes whipped up his creations based on recipes handed down from his grandmother's Quaker heritage, ultimately naming the shop after the family's 120-year-old Quaker bonnet.
In his later years, Hayes turned the shop over to Gladys English and Marie Allen. In 1978, the two women sold it to Buffalo native Liz Kolken, who carried on the Quaker Bonnet tradition.
Liz later decided to reach even more people through a brochure that features some of her specialties, and sold her gourmet items across the United States and Canada. With the exception of her own creations - Buffalo Chips (the ultimate macaroon dipped in chocolate), Wooden Nickels (peanut butter shortbread), and Snowbanks (meringue chunks studded with pecans and drenched in chocolate), all other selections are from recipes that Harold Hayes passed down to the business.
Thanks to Liz Kolken, the tradition of quality remains just a true to the Quaker Bonnet today as it did more than 80 years ago. She invites you to become a part of that grand tradition. You can have catered events at the Eatery, in your home, at your place of business, or in many historical Buffalo Buildings including the Theodore Roosevelt Site, International Institute, Botanical Garden, or Karpeles museums to name a few.
